Does Anyone Here Know How to Make Potato Salad?

HARFORD COUNTY: June 21, 2008 -- My Mother used to make the greatest taste-ing potato salad. I loved my Mother's potato salad. Coleslaw too, but coleslaw is another story.

I get my potato salad from a couple supermarket delis here in the County. They both carry two versions - an Amish, and a Southern style. One is too sharp; the other downright bland. They are classic "manufactured" deli food products. They have no taste. I am amazed. Don't these people sample their own food before they serve it to others? Do they have no taste? Do they care?

How hard can it be to make potato salad? It's ninety percent boiled potatoes, and ten percent everything else. It's pretty hard to mess up boiling potatoes. You leave them in boiling water a prescribed amount of time and that's it. So it has to be the everything else that's the problem. Just what is this everything else?

One classic potato salad is made with potatoes, mayonnaise, vinegar, sugar, celery, onion, eggs, and a garnish of green onions and/or tomatoes. One old-fashioned potato salad has potatoes, onion garlic, vinegar, parsley, olive oil, sugar, and salt and pepper. It is recommended that this potato salad be refrigerated overnight for best flavor. What is the everything else here? Mayonnaise, vinegar, sugar, and onions. Mix to taste, right? Unless you have no taste, or don't really care. Then you mix to a formula. Here's one forumula for classic potato salad (from about.com:southern food):

    Ingredients:
    1 cup mayonnaise
    2 tablespoons vinegar
    1 1/2 teaspoons salt
    1/8 teaspoon pepper, or to taste
    1 teaspoon sugar
    5 to 6 med. potatoes, about 1 1/2 to 2 pounds, peeled, cubed, cooked
    1 cup thinly sliced celery
    1/2 cup chopped onion
    3 eggs, hard-boiled
    1 to 2 Tbs chopped green onions, optional garnish
    1 tomato, cut in wedges, optional garnish

    Preparation:
    Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add remaining ingredients; toss gently to combine well. Cover; chill for 2 or more hours for best flavor. Garnish with chopped green onion and tomato wedges, if desired. Serves 6 to 8.
